Shrimp and Walnuts

  • 15 medium shrimp, peeled and deveined

  • 1 tsp chicken powder

  • 1 tbsp cornstarch

  • ⅛ tsp baking soda

  • ½ tsp YumYum, or MSG

  • 1 tsp cooking wine

  • 1 tsp sesame oil

  • ⅛ tsp salt

  • 1/3 cup walnuts

Batter

  • Vegetable oil (for frying)

  • 1 cup self-raising flour

  • 1/2 cup cornflour

  • 1 cup + 2 tablespoons water

Sauce

  • 4 tablespoons low fat mayo, or regular mayonnaise

  • 3 tablespoons condensed milk

Instructions

  1. In a mixing bowl, combine chicken powder, cornstarch, baking soda, YumYum, cooking wine, sesame oil, and salt.
  2. Stir the mixture until well combined.
  3. Add the prawns to the bowl and gently massage them into the marinade to ensure even seasoning.
  4. In a separate large bowl, mix self-raising flour and cornflour.
  5. Gradually add 1 cup plus 2 tablespoons of water while whisking until the batter is smooth.
  6. Heat vegetable oil in a wok or large pot over high heat to 180°C (350°F).
  7. Dip the marinated prawns into the batter, ensuring they are fully coated.
  8. Carefully drop the prawns into the hot oil one at a time and fry for 3-5 minutes until golden brown and cooked through.
  9. Add the walnuts to the oil and fry for 30 seconds.
  10. Strain the fried prawns and walnuts from the oil and drain on a plate lined with paper towels.
  11. Reserve the leftover oil for future frying.
  12. In an empty wok or large pot over low heat, combine mayo and condensed milk, stirring until well mixed.
  13. Add the fried prawns to the sauce and gently toss to coat evenly.
  14. Transfer the coated prawns to a serving plate and garnish with the fried walnuts.
